Aiming for the Finest Western Sweets from Hokkaido

Since Pearlmontdore was founded in 1971, our fundamental policy has been to create the best Western sweets with the “spirit of confectioners”. We have carefully selected ingredients mainly from Hokkaido and taken pride in the traditional handmade methods of our confectioners.

With gratitude for abundant resources from Hokkaido—such as wheat, butter, eggs, and milk—we are committed to providing high-quality Western sweets.

Pearlmontdore’s Products

Our founder, Shozo Shimode, set out to devise an original manufacturing method for the supreme sponge cakes. His effort bore fruit as “Western Castella” named for his desire to create a fluffy sponge cake in contrast to the traditionally firm “Japanese Castella”.

Our product development concept is to make the most delicious Western sweets using Hokkaido ingredients; this is the “spirit of confectioners” that serves as the corporate philosophy of Pearlmontdore.

Western Castella

Castella originated as a sweet brought to Nagasaki from Portugal during the Edo period. While traditional Japanese castella has a slightly firm texture, Shozo Shimode wanted to create a fluffy version in Hokkaido. We continue to pursue the pure deliciousness of this simple sponge cake.
